Ingredients:  

Main Ingredients

  • 1.5 pounds beef stew meat cut into chunks
  • 1 onion chopped
  • 2 carrots sliced
  • 2 cloves garlic minced
  • 1 cup red wine
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • to garnish Fresh parsley chopped

Instructions: 

  • Season the beef with salt and pepper, then coat with flour.
  • Turn on the Instant Pot to sauté mode and heat the olive oil.
  • Brown the beef in batches, then set aside.
  • Add onions, carrots, and garlic to the pot and sauté until softened.
  • Stir in tomato paste, thyme, and rosemary.
  • Pour in the red wine and beef broth, scraping up any browned bits from the bottom.
  • Add the beef back to the pot.
  • Close the lid, set to high pressure for 30 minutes.
  • Once done, let the pressure release naturally for 10 minutes, then manually release the remaining pressure.
  • Serve hot, garnished with fresh parsley.
