Ingredients:  

Main Ingredients

  • 1.5 lbs beef stew meat cubed
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 inch ginger grated
  • 1 can diced tomatoes 14 oz
  • 1 can coconut milk 14 oz
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions: 

  • Set the Instant Pot to sauté mode and brown the beef in batches. Remove and set aside.
  • Add a bit of oil if needed and sauté the onions until translucent. Add garlic and ginger, cook for another minute.
  • Pour in the diced tomatoes and coconut milk, stirring to combine.
  • Add the beef back to the pot along with curry powder, turmeric, salt, and pepper. Stir well.
  • Close the lid, set to high pressure for 20 minutes.
  • Once done, allow for a natural pressure release for 10 minutes before quick releasing any remaining pressure.
  • Serve over rice, garnished with fresh cilantro.

Notes:

For a spicier version, add a chopped chili pepper or a teaspoon of chili powder.
