Instructions:
Season the neck bones with salt, pepper, paprika, and thyme.
Turn on the Instant Pot to sauté mode and brown the neck bones on all sides.
Add the chopped onion and garlic, sauté for another 2 minutes.
Pour in the beef broth and add the bay leaf.
Close the Instant Pot, set to high pressure for 45 minutes.
Once done, allow for a natural pressure release for 15 minutes.
Serve the neck bones with the cooking liquid as a gravy.
Notes:
For a richer flavor, you can add a splash of Worcestershire sauce or soy sauce to the beef broth.
