Ingredients:  

Main Ingredients

  • 1.5 lbs beef stew meat cut into bite-sized pieces
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • to taste Fresh parsley chopped, for garnish

Instructions: 

  • Season the beef with salt and pepper.
  • Turn on the Instant Pot to sauté mode and brown the beef in batches. Remove and set aside.
  • Add onions and garlic to the pot and sauté until softened.
  • Pour in the beef broth, Worcestershire sauce, thyme, and rosemary. Stir to combine.
  • Add the beef back to the pot. Close the lid and set to high pressure for 20 minutes.
  • Once done, do a quick release and open the lid.
  • In a small bowl, mix cornstarch and water to create a slurry. Stir into the beef mixture to thicken the gravy.
  • Serve the beef tips and gravy over mashed potatoes or rice. Garnish with fresh parsley.

Notes:

This dish pairs well with a side of steamed vegetables or a fresh green salad.
