Ingredients:  

Main Ingredients

  • 2 pounds Yukon Gold potatoes peeled and thinly sliced
  • 1 small onion thinly sliced
  • 2 cups shredded cheddar cheese
  • 1.5 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 cloves garlic minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • to taste Salt and pepper
  • as needed Chopped fresh parsley for garnish

Instructions: 

  • Turn on the Instant Pot and select the sauté function. Melt the butter and sauté the garlic and onions until softened.
  • Stir in the flour and cook for 1-2 minutes until lightly browned.
  • Gradually whisk in the broth and cream until smooth. Season with salt and pepper.
  • Add a layer of sliced potatoes in the Instant Pot, followed by a layer of cheese and some of the cream mixture. Repeat layers until all ingredients are used.
  • Close the Instant Pot with the lid and set the valve to sealing. Cook on high pressure for 10 minutes.
  • Once done, allow for a natural pressure release for 5 minutes, then do a quick release.
  • Carefully open the lid and let the scalloped potatoes sit for a few minutes to thicken.
  • Serve garnished with chopped parsley.
