This Instant Pot Scalloped Potatoes recipe is a quick and delicious way to enjoy a classic comfort food. Perfect for family dinners or special occasions.
2poundsYukon Gold potatoespeeled and thinly sliced
1smallonionthinly sliced
2cupsshredded cheddar cheese
1.5cupschicken or vegetable broth
1cupheavy cream
2clovesgarlicminced
2tablespoonsbutter
2tablespoonsall-purpose flour
to tasteSalt and pepper
as neededChopped fresh parsleyfor garnish
Instructions:
Turn on the Instant Pot and select the sauté function. Melt the butter and sauté the garlic and onions until softened.
Stir in the flour and cook for 1-2 minutes until lightly browned.
Gradually whisk in the broth and cream until smooth. Season with salt and pepper.
Add a layer of sliced potatoes in the Instant Pot, followed by a layer of cheese and some of the cream mixture. Repeat layers until all ingredients are used.
Close the Instant Pot with the lid and set the valve to sealing. Cook on high pressure for 10 minutes.
Once done, allow for a natural pressure release for 5 minutes, then do a quick release.
Carefully open the lid and let the scalloped potatoes sit for a few minutes to thicken.
