beef broth

Guinness beer

tomato paste

Salt and pepper
to taste

olive oil
Instructions:
Set the Instant Pot to sauté mode and heat the olive oil.
Brown the beef in batches and set aside.
Add onions and garlic to the pot, sauté until softened.
Stir in tomato paste, thyme, salt, and pepper.
Pour in the Guinness beer and deglaze the pot.
Add the beef back to the pot along with carrots, potatoes, and beef broth.
Close the lid, set to high pressure for 35 minutes.
Quick release the pressure and serve hot.
Notes:
For a thicker stew, you can mash some of the potatoes after cooking.
