Ingredients:  

Main Ingredients

  • 1.5 lbs stewing beef cut into chunks
  • 1 onion chopped
  • 2 cloves garlic minced
  • 3 carrots sliced
  • 3 potatoes peeled and cubed
  • 2 cups beef broth
  • 1 cup Guinness beer
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Brown the beef in batches and set aside.
  • Add onions and garlic to the pot, sauté until softened.
  • Stir in tomato paste, thyme, salt, and pepper.
  • Pour in the Guinness beer and deglaze the pot.
  • Add the beef back to the pot along with carrots, potatoes, and beef broth.
  • Close the lid, set to high pressure for 35 minutes.
  • Quick release the pressure and serve hot.

Notes:

For a thicker stew, you can mash some of the potatoes after cooking.
