Instructions:
Set the Instant Pot to sauté mode and heat the olive oil. Add the diced chicken and cook until browned.
Add the onion, garlic, Italian seasoning, salt, and pepper. Cook for another 2 minutes.
Pour in the diced tomatoes (with juices) and chicken broth. Stir in the pasta.
Close the Instant Pot lid and set to manual high pressure for 5 minutes.
Once done, quick release the pressure and open the lid. Stir in the heavy cream and Parmesan cheese until well combined.
Serve the pasta garnished with fresh parsley.
Notes:
This recipe is perfect for a quick weeknight dinner and can be easily doubled to serve a larger crowd.
