Ingredients:  

Main Ingredients

  • 1 pound boneless, skinless chicken breasts diced
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can diced tomatoes 14.5 oz, with juices
  • 2 cups chicken broth
  • 8 oz penne pasta
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • to taste Fresh parsley chopped, for garnish

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil. Add the diced chicken and cook until browned.
  • Add the onion, garlic, Italian seasoning, salt, and pepper. Cook for another 2 minutes.
  • Pour in the diced tomatoes (with juices) and chicken broth. Stir in the pasta.
  • Close the Instant Pot lid and set to manual high pressure for 5 minutes.
  • Once done, quick release the pressure and open the lid. Stir in the heavy cream and Parmesan cheese until well combined.
  • Serve the pasta garnished with fresh parsley.

Notes:

This recipe is perfect for a quick weeknight dinner and can be easily doubled to serve a larger crowd.
