Ingredients:  

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup Arborio rice
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon saffron threads
  • 1.5 cups chicken broth
  • 1 can diced tomatoes, drained
  • 0.5 pound chicken thighs, cut into bite-sized pieces
  • 0.5 pound shrimp, peeled and deveined
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the onion, garlic, and red bell pepper. Cook until softened.
  • Stir in the rice, smoked paprika, and saffron threads.
  • Pour in the chicken broth and diced tomatoes. Mix well.
  • Add the chicken thighs on top of the rice mixture.
  • Close the Instant Pot lid and set to high pressure for 8 minutes.
  • Once done, quick release the pressure and carefully open the lid.
  • Stir in the shrimp and season with salt and pepper.
  • Close the lid and let the residual heat cook the shrimp for 5 minutes.
  • Serve the paella hot, garnished with fresh parsley.

Notes:

Feel free to add other seafood like mussels or clams for a more traditional paella.
