Fresh parsley, chopped (for garnish)
Instructions:
Set the Instant Pot to sauté mode and heat the olive oil.
Add the onion, garlic, and red bell pepper. Cook until softened.
Stir in the rice, smoked paprika, and saffron threads.
Pour in the chicken broth and diced tomatoes. Mix well.
Add the chicken thighs on top of the rice mixture.
Close the Instant Pot lid and set to high pressure for 8 minutes.
Once done, quick release the pressure and carefully open the lid.
Stir in the shrimp and season with salt and pepper.
Close the lid and let the residual heat cook the shrimp for 5 minutes.
Serve the paella hot, garnished with fresh parsley.
Notes:
Feel free to add other seafood like mussels or clams for a more traditional paella.
