Ingredients:  

Main Ingredients

  • 1.5 lbs boneless, skinless chicken thighs cut into chunks
  • 1 onion chopped
  • 3 carrots sliced
  • 2 celery stalks chopped
  • 3 potatoes diced
  • 3 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions: 

  • Set the Instant Pot to sauté mode and heat olive oil.
  • Add chicken pieces and cook until browned.
  • Add onions, carrots, celery, and garlic. Sauté for a few minutes.
  • Stir in thyme, rosemary, salt, and pepper.
  • Pour in chicken broth and add potatoes.
  • Close the Instant Pot lid, set to high pressure for 10 minutes.
  • Quick release the pressure and serve hot.

Notes:

Feel free to add other vegetables like peas or corn for extra flavor and nutrition.
