Instructions:
Set the Instant Pot to sauté mode and heat olive oil.
Add chicken pieces and cook until browned.
Add onions, carrots, celery, and garlic. Sauté for a few minutes.
Stir in thyme, rosemary, salt, and pepper.
Pour in chicken broth and add potatoes.
Close the Instant Pot lid, set to high pressure for 10 minutes.
Quick release the pressure and serve hot.
Notes:
Feel free to add other vegetables like peas or corn for extra flavor and nutrition.
