Ingredients:  

Main Ingredients

  • 1 lb cooked turkey shredded
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 1 clove garlic minced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup uncooked pasta

Instructions: 

  • Set the Instant Pot to sauté mode and add a bit of oil. Sauté the onion, carrots, celery, and garlic until softened.
  • Add the shredded turkey, chicken broth, thyme, salt, and pepper. Close the lid and set the Instant Pot to high pressure for 10 minutes.
  • Once done, do a quick release and open the lid. Add the pasta and set the Instant Pot to sauté mode again. Cook until the pasta is tender.
  • Adjust seasoning if needed and serve hot.

Notes:

This recipe is perfect for using up leftover turkey from Thanksgiving or any other occasion. Feel free to add other vegetables like peas or corn for extra flavor and nutrition.
