  • 1 pound dried pinto beans rinsed and picked over
  • 6 cups water
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 jalapeño diced
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions: 

  • Place the rinsed pinto beans, water, onion, garlic, jalapeño, diced tomatoes, cumin, and chili powder in the Instant Pot.
  • Close the lid and set the vent to sealing. Cook on high pressure for 45 minutes.
  • Once the cooking time is up, allow for a natural pressure release for 10 minutes before manually releasing any remaining pressure.
  • Season with salt and pepper to taste.
  • Serve the charro beans hot, garnished with fresh cilantro.
