Ingredients:  

Main Ingredients

  • 1 cup long-grain white rice
  • 1.5 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried dill
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup diced tomatoes
  • 0.5 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Instructions: 

  • Rinse the rice under cold water until the water runs clear. Drain well.
  • Turn on the Instant Pot and select the sauté function. Heat the olive oil and sauté the onion and garlic until softened.
  • Add the rice and cook for 1-2 minutes, stirring constantly.
  • Stir in the broth, oregano, dill, salt, and pepper. Close the lid and set the Instant Pot to high pressure for 4 minutes.
  • Once the cooking time is up, allow for a natural pressure release for 5 minutes, then do a quick pressure release.
  • Carefully open the lid and fluff the rice with a fork. Stir in the diced tomatoes and feta cheese.
  • Serve the Greek rice garnished with fresh parsley.
