Instructions:
Rinse the rice under cold water until the water runs clear. Drain well.
Turn on the Instant Pot and select the sauté function. Heat the olive oil and sauté the onion and garlic until softened.
Add the rice and cook for 1-2 minutes, stirring constantly.
Stir in the broth, oregano, dill, salt, and pepper. Close the lid and set the Instant Pot to high pressure for 4 minutes.
Once the cooking time is up, allow for a natural pressure release for 5 minutes, then do a quick pressure release.
Carefully open the lid and fluff the rice with a fork. Stir in the diced tomatoes and feta cheese.
Serve the Greek rice garnished with fresh parsley.
