Ingredients:

  • 4 cups chicken or vegetable broth
  • 2 packs ramen noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 1 teaspoon sesame oil
  • 1 cup sliced mushrooms
  • 2 boiled eggs
  • 2 cups baby spinach
  • Sliced green onions for garnish
  • Nori sheets for garnish

Instructions: 

  • In the Instant Pot, combine broth, soy sauce, miso paste, sesame oil, and mushrooms.
  • Close the lid, set the valve to sealing, and cook on high pressure for 5 minutes.
  • Quick release the pressure and carefully open the lid.
  • Add the ramen noodles to the pot and cook on sauté mode for 3-4 minutes until noodles are cooked.
  • Serve the ramen in bowls, and top with sliced boiled eggs, baby spinach, green onions, and nori sheets.

Notes:

This recipe is versatile and can be customized with your favorite toppings like corn, bamboo shoots, or even a dash of chili oil for some heat.
