Instructions:
Set the Instant Pot to sauté mode and heat the vegetable oil. Add the onion and garlic, sauté until fragrant.
Add the pork shoulder pieces and brown on all sides.
Stir in the oregano, cumin, and chili powder.
Add the hominy and chicken broth. Season with salt and pepper.
Close the Instant Pot lid and set to high pressure for 30 minutes.
Once done, allow for a natural pressure release for 10 minutes before quick releasing the remaining pressure.
Serve the pozole hot with your choice of toppings.
