Ingredients:  

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 pound pork shoulder, cut into chunks
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 can (28 oz) hominy, drained and rinsed
  • 4 cups chicken broth
  • to taste Salt and pepper

Toppings

  • as needed sliced radishes
  • as needed chopped cilantro
  • as needed lime wedges
  • as needed shredded cabbage

Instructions: 

  • Set the Instant Pot to sauté mode and heat the vegetable oil. Add the onion and garlic, sauté until fragrant.
  • Add the pork shoulder pieces and brown on all sides.
  • Stir in the oregano, cumin, and chili powder.
  • Add the hominy and chicken broth. Season with salt and pepper.
  • Close the Instant Pot lid and set to high pressure for 30 minutes.
  • Once done, allow for a natural pressure release for 10 minutes before quick releasing the remaining pressure.
  • Serve the pozole hot with your choice of toppings.

Notes:

This recipe is a great way to enjoy a traditional Mexican dish with the convenience of an Instant Pot. Feel free to adjust the spices to your taste.
