  • 2 lbs beef short ribs
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup beef broth
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions: 

  • Season short ribs with salt and pepper.
  • Select "Saute" function on pressure cooker, add olive oil, and brown short ribs on all sides. Remove and set aside.
  • Add onion and garlic to the pot, sauté until softened.
  • Stir in tomato paste, Worcestershire sauce, thyme, and bay leaf.
  • Return short ribs to the pot, pour in beef broth.
  • Close lid, set to high pressure for 45 minutes.
  • Quick release pressure, open lid carefully.
  • Serve short ribs with sauce over mashed potatoes or polenta.
