Ingredients:  

Main Ingredients

  • 1 lb chicken breast, diced
  • 1 cup carrots, sliced
  • 1 cup frozen peas
  • 0.5 cup onion, chopped
  • 0.5 cup celery, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 2 tbsp all-purpose flour
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 package refrigerated pie crusts

Instructions: 

  • Set Instant Pot to sauté mode and cook chicken until browned.
  • Add carrots, peas, onion, celery, and garlic. Cook for 2-3 minutes.
  • Stir in flour, thyme, salt, and pepper.
  • Pour in chicken broth and cream. Stir well.
  • Close lid, set to high pressure for 5 minutes.
  • Quick release pressure, stir well.
  • Pour mixture into a baking dish, cover with pie crust.
  • Bake in preheated oven at 400°F for 15-20 minutes, until crust is golden brown.

Notes:

For a richer flavor, you can use a mix of chicken thighs and breasts. Feel free to add other vegetables like corn or green beans.
