Instructions:
Turn on the Instant Pot and select the sauté function. Heat oil and sauté onions until golden brown.
Add ginger-garlic paste and sauté for a minute. Add tomatoes and cook until they soften.
Add mutton pieces, yogurt, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well.
Close the Instant Pot lid, set the valve to sealing, and pressure cook on high for 25 minutes.
Once done, let the pressure release naturally for 10 minutes. Open the lid carefully.
Garnish with fresh coriander leaves and serve hot with rice or bread.
Notes:
For a richer flavor, you can marinate the mutton with yogurt and spices for a few hours before cooking.
