Ingredients:  

Main Ingredients

  • 3 lb corned beef brisket
  • 1 onion, quartered
  • 4 cloves garlic, smashed
  • 1 cup beef broth
  • 1 tablespoon pickling spice
  • 1 head cabbage, cut into wedges
  • 1 lb carrots, peeled and cut into chunks
  • 1 lb potatoes, quartered

Instructions: 

  • Place the corned beef brisket in the Instant Pot.
  • Add onion, garlic, beef broth, and pickling spice.
  • Close the lid and set the Instant Pot to high pressure for 90 minutes.
  • Once done, allow for a natural pressure release for 10 minutes before quick releasing the remaining pressure.
  • Add cabbage, carrots, and potatoes to the Instant Pot.
  • Close the lid and set to high pressure for an additional 5 minutes.
  • Quick release the pressure and remove the vegetables and corned beef.
  • Slice the corned beef against the grain and serve with the vegetables.

Notes:

For best results, slice the corned beef against the grain to ensure tenderness.
