Ingredients:  

Main Ingredients

  • 2 lbs flank steak
  • 1 onion sliced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 3 cloves garlic minced
  • 14 oz crushed tomatoes 1 can
  • 1 cup beef broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • to taste Salt
  • to taste Pepper
  • 2 tbsp olive oil

Instructions: 

  • Season the flank steak with salt, pepper, cumin, paprika, and oregano.
  • Set the Instant Pot to sauté mode and heat olive oil. Sear the steak on both sides until browned. Remove and set aside.
  • Add onions, bell peppers, and garlic to the pot. Sauté until softened.
  • Pour in crushed tomatoes and beef broth. Stir well.
  • Return the steak to the pot. Close the lid and set to high pressure for 30 minutes.
  • Once done, allow natural pressure release for 10 minutes, then quick release.
  • Shred the steak using two forks. Serve the Ropa Vieja hot over rice.

Notes:

For an extra touch of authenticity, serve with black beans and fried plantains.
