Instructions:
Season the flank steak with salt, pepper, cumin, paprika, and oregano.
Set the Instant Pot to sauté mode and heat olive oil. Sear the steak on both sides until browned. Remove and set aside.
Add onions, bell peppers, and garlic to the pot. Sauté until softened.
Pour in crushed tomatoes and beef broth. Stir well.
Return the steak to the pot. Close the lid and set to high pressure for 30 minutes.
Once done, allow natural pressure release for 10 minutes, then quick release.
Shred the steak using two forks. Serve the Ropa Vieja hot over rice.
Notes:
For an extra touch of authenticity, serve with black beans and fried plantains.
