Ingredients:  

Main Ingredients

  • 1 cup basmati rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon cardamom powder
  • 10-12 strands saffron
  • 2 tablespoons chopped nuts (almonds, pistachios, cashews)
  • 1 tablespoon raisins

Instructions: 

  • Rinse the basmati rice under running water until the water runs clear.
  • In the Instant Pot, combine the rinsed rice, milk, sugar, cardamom powder, and saffron strands.
  • Close the lid, set the vent to sealing, and pressure cook on high for 20 minutes.
  • Once done, let the pressure release naturally for 10 minutes, then manually release any remaining pressure.
  • Open the lid, stir the kheer well, and add the chopped nuts and raisins.
  • Serve the kheer warm or chilled.

Notes:

For a richer flavor, you can add a few drops of rose water or kewra water before serving. Garnish with additional nuts for an extra crunch.
