Instructions:
Set the Instant Pot to sauté mode and heat the olive oil.
Add the onion, garlic, carrots, and celery. Cook until the vegetables are softened.

Pour in the chicken broth and add thyme, oregano, salt, and pepper.
Stir in the gnocchi and seal the Instant Pot. Cook on high pressure for 5 minutes.
Quick release the pressure and open the Instant Pot. Stir in the spinach until wilted.
Stir in the heavy cream and let the soup simmer for a few minutes before serving.
