Ingredients:  

Main Ingredients

  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 1 pound boneless, skinless chicken breasts diced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 16 oz potato gnocchi
  • 2 cups fresh spinach
  • 1 cup heavy cream

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the onion, garlic, carrots, and celery. Cook until the vegetables are softened.
  • Add the diced chicken and cook until no longer pink.
  • Pour in the chicken broth and add thyme, oregano, salt, and pepper.
  • Stir in the gnocchi and seal the Instant Pot. Cook on high pressure for 5 minutes.
  • Quick release the pressure and open the Instant Pot. Stir in the spinach until wilted.
  • Stir in the heavy cream and let the soup simmer for a few minutes before serving.

Notes:

This soup is perfect for a quick weeknight dinner or a cozy weekend meal. Serve with crusty bread for a complete meal.
