Ingredients:  

Main Ingredients

  • 3 lbs beef chuck roast cut into chunks
  • 1 onion sliced
  • 4 cloves garlic minced
  • 1 cup beef broth
  • 1 can diced tomatoes 14.5 oz
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup pepperoncini peppers sliced (optional)

Instructions: 

  • Season beef with salt and pepper.
  • Set Instant Pot to sauté mode and brown beef on all sides.
  • Add onions and garlic, cook until softened.
  • Pour in beef broth, diced tomatoes, Italian seasoning, and pepperoncini peppers.
  • Close lid, set to high pressure for 60 minutes.
  • Quick release pressure, shred beef with forks.
  • Serve on sandwiches or over pasta.

Notes:

For a spicier version, add more pepperoncini peppers or a dash of red pepper flakes.
