Ingredients:  

Main Ingredients

  • 3 lb bottom round roast
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions: 

  • Season the bottom round roast with salt and pepper.
  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Sear the roast on all sides until browned, then remove and set aside.
  • Add the chopped onion and garlic to the Instant Pot and sauté until softened.
  • Pour in the beef broth and deglaze the pot, scraping up any browned bits from the bottom.
  • Return the roast to the Instant Pot and sprinkle with thyme and rosemary.
  • Close the lid, set the valve to sealing, and cook on high pressure for 60 minutes.
  • Allow for a natural pressure release for 15 minutes before quick releasing any remaining pressure.
  • Remove the roast from the Instant Pot and let it rest before slicing.
  • Serve the roast with the onions and gravy from the pot.

Notes:

For best results, let the roast rest for at least 10 minutes before slicing to retain its juices.
