Ingredients:  

Main Ingredients

  • 2 pounds pork shoulder cut into chunks
  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  • 1 cup water
  • 4 cloves garlic minced
  • 1 onion sliced
  • 1 teaspoon peppercorns
  • 3 bay leaves
  • 2 tablespoons brown sugar
  • 2 tablespoons cooking oil

Instructions: 

  • In the Instant Pot, select the sauté function and heat oil. Add pork and brown on all sides.
  • Add garlic, onion, soy sauce, vinegar, water, peppercorns, bay leaves, and brown sugar. Stir to combine.
  • Close the lid, set the valve to sealing, and cook on high pressure for 30 minutes.
  • Allow for a natural pressure release for 10 minutes before quick releasing any remaining pressure.
  • Serve hot over rice.

Notes:

For best results, use a good quality soy sauce and vinegar. Adjust the sweetness by adding more or less brown sugar according to your taste.
