Instructions:
In the Instant Pot, select the sauté function and heat oil. Add pork and brown on all sides.
Add garlic, onion, soy sauce, vinegar, water, peppercorns, bay leaves, and brown sugar. Stir to combine.
Close the lid, set the valve to sealing, and cook on high pressure for 30 minutes.
Allow for a natural pressure release for 10 minutes before quick releasing any remaining pressure.
Serve hot over rice.
Notes:
For best results, use a good quality soy sauce and vinegar. Adjust the sweetness by adding more or less brown sugar according to your taste.
