Ingredients:  

Main Ingredients

  • 1 lb boneless, skinless chicken breasts cut into cubes
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 can diced tomatoes 14 oz, drained
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 8 oz penne pasta
  • to taste Salt and pepper
  • to garnish Grated Parmesan cheese

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the chicken and cook until browned on all sides.
  • Add the onion and garlic, sauté for 2 minutes.
  • Pour in the chicken broth and scrape up any browned bits from the bottom of the pot.
  • Stir in the heavy cream, diced tomatoes, basil, oregano, and penne pasta.
  • Close the Instant Pot lid, set to sealing, and cook on high pressure for 5 minutes.
  • Quick release the pressure and stir the pasta.
  • Season with salt and pepper to taste.
  • Serve garnished with grated Parmesan cheese.

Notes:

For a richer flavor, you can add some sun-dried tomatoes or spinach to the dish.
