Instructions:
Turn on the Instant Pot to sauté mode and add a bit of oil.
Sauté the onions and garlic until fragrant, then add the diced chicken and cook until browned.
Add the rice, chicken broth, paprika, salt, and pepper. Stir to combine.
Close the Instant Pot lid and set to high pressure for 8 minutes.
Once done, allow for a natural pressure release for 5 minutes before quick releasing the remaining pressure.
Fluff the rice with a fork, garnish with fresh parsley, and serve hot.
