Ingredients:  

Main Ingredients

  • 1 cup diced carrots
  • 1 cup chopped broccoli
  • 1 cup sliced bell peppers
  • 1 cup diced zucchini
  • 1 can chickpeas, drained
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper

Instructions: 

  • Add olive oil to the Instant Pot and set it to sauté mode.
  • Add carrots, broccoli, bell peppers, zucchini, and chickpeas. Sauté for 3-4 minutes.
  • Add garlic powder, paprika, salt, and pepper. Stir well.
  • Close the lid, set the Instant Pot to manual high pressure for 5 minutes.
  • Once done, quick release the pressure and serve hot.
