Ingredients:  

Main Ingredients

  • 3 lbs beef chuck roast cut into chunks
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1/4 cup apple cider vinegar
  • 1/4 cup lime juice
  • 1/4 cup beef broth
  • 2 chipotle peppers in adobo sauce chopped
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • 1 tsp ground cloves
  • Salt and pepper to taste

Instructions: 

  • Place all ingredients in the Instant Pot and mix well.
  • Close the lid and set the Instant Pot to high pressure for 60 minutes.
  • Once done, allow for a natural pressure release for 10 minutes before manually releasing the remaining pressure.
  • Shred the beef using two forks.
  • Serve the barbacoa in tacos, burritos, or over rice.

Notes:

For an extra kick, add more chipotle peppers or a splash of hot sauce. You can also use the barbacoa as a topping for nachos or in a salad.
