Ingredients:  

Main Ingredients

  • 2 pounds beef chuck roast cut into chunks
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon dried thyme
  • to taste salt and pepper
  • 2 tablespoons olive oil

Instructions: 

  • Season beef chunks with salt and pepper.
  • Set Instant Pot to sauté mode and heat olive oil. Brown beef in batches and set aside.
  • Add onion and garlic to the pot, sauté until fragrant.
  • Pour in beef broth, soy sauce, brown sugar, and thyme. Stir to combine.
  • Return beef to the pot. Close lid, set to high pressure for 45 minutes.
  • Once done, let pressure release naturally for 10 minutes, then manually release.
  • Serve beef with sauce over rice or mashed potatoes.

Notes:

For a richer flavor, you can marinate the beef chunks in soy sauce and brown sugar for a few hours before cooking.
