Ingredients:  

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 cans white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the onion, carrots, celery, and garlic. Sauté for 5 minutes until softened.
  • Add the white beans, vegetable broth, thyme, salt, and pepper.
  • Close the Instant Pot lid and set to high pressure for 10 minutes.
  • Once done, do a quick pressure release and carefully open the lid.
  • Use an immersion blender to partially blend the soup for a creamy texture.
  • Adjust seasoning if needed.
  • Serve hot, garnished with fresh parsley.

Notes:

This soup is perfect for meal prep and can be stored in the refrigerator for up to 5 days.
