onion, chopped

carrots, diced

celery stalks, diced

cloves
garlic, minced

white beans, drained and rinsed

vegetable broth

teaspoon
dried thyme
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Set the Instant Pot to sauté mode and heat the olive oil.
Add the onion, carrots, celery, and garlic. Sauté for 5 minutes until softened.
Add the white beans, vegetable broth, thyme, salt, and pepper.
Close the Instant Pot lid and set to high pressure for 10 minutes.
Once done, do a quick pressure release and carefully open the lid.
Use an immersion blender to partially blend the soup for a creamy texture.
Adjust seasoning if needed.
Serve hot, garnished with fresh parsley.
Notes:
This soup is perfect for meal prep and can be stored in the refrigerator for up to 5 days.
