Ingredients:  

Main Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 can diced tomatoes
  • 1/2 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions: 

  • Season chicken breasts with salt and pepper.
  • Set Instant Pot to sauté mode and heat olive oil.
  • Sear chicken breasts until browned, then remove and set aside.
  • Add onion and garlic to Instant Pot, sauté until fragrant.
  • Pour in chicken broth and deglaze the pot.
  • Add diced tomatoes, basil, oregano, and stir.
  • Return chicken breasts to the pot.
  • Close the lid, set to high pressure for 8 minutes.
  • Quick release pressure, remove chicken, and set aside.
  • Stir in heavy cream, simmer until sauce thickens.
  • Serve chicken with sauce, garnish with parsley.

Notes:

This dish pairs well with pasta or a side of steamed vegetables.
