garlic, minced

chicken broth

diced tomatoes

heavy cream

dried basil

dried oregano
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Season chicken breasts with salt and pepper.
Set Instant Pot to sauté mode and heat olive oil.
Sear chicken breasts until browned, then remove and set aside.
Add onion and garlic to Instant Pot, sauté until fragrant.
Pour in chicken broth and deglaze the pot.
Add diced tomatoes, basil, oregano, and stir.
Return chicken breasts to the pot.
Close the lid, set to high pressure for 8 minutes.
Quick release pressure, remove chicken, and set aside.
Stir in heavy cream, simmer until sauce thickens.
Serve chicken with sauce, garnish with parsley.
Notes:
This dish pairs well with pasta or a side of steamed vegetables.
