Salt and pepper to taste

Scotch bonnet pepper (optional for heat)
Instructions:
Rinse the kidney beans and place them in the Instant Pot.
Add coconut milk, water, rice, onion, garlic, thyme, allspice, salt, pepper, and Scotch bonnet pepper.
Close the Instant Pot lid and set to high pressure for 20 minutes.
Once done, allow natural pressure release for 10 minutes before quick releasing the remaining pressure.
Fluff the rice and peas with a fork before serving.
Notes:
This dish pairs well with jerk chicken or grilled fish.
