Ingredients:  

Main Ingredients

  • 1 cup dried red kidney beans
  • 2 cups coconut milk
  • 2 cups water
  • 2 cups long-grain white rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon allspice
  • Salt and pepper to taste
  • 1 Scotch bonnet pepper (optional for heat)

Instructions: 

  • Rinse the kidney beans and place them in the Instant Pot.
  • Add coconut milk, water, rice, onion, garlic, thyme, allspice, salt, pepper, and Scotch bonnet pepper.
  • Close the Instant Pot lid and set to high pressure for 20 minutes.
  • Once done, allow natural pressure release for 10 minutes before quick releasing the remaining pressure.
  • Fluff the rice and peas with a fork before serving.

Notes:

This dish pairs well with jerk chicken or grilled fish.
