Ingredients:  

Main Ingredients

  • 1 whole chicken carcass
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, smashed
  • 1 bay leaf
  • 1 teaspoon whole peppercorns
  • Water enough to cover ingredients

Instructions: 

  • Place the chicken carcass, onion, carrots, celery, garlic, bay leaf, and peppercorns in the Instant Pot.
  • Fill the Instant Pot with water until the ingredients are just covered.
  • Close the lid and set the Instant Pot to high pressure for 1 hour.
  • Once the cooking time is up, allow the pressure to release naturally.
  • Strain the broth through a fine-mesh sieve and discard the solids.
  • Use immediately or store in the refrigerator for up to 3 days or freeze for later use.
