Ingredients:  

Main Ingredients

  • 4 pieces chicken thighs
  • 4 slices bacon chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup red wine
  • 1 cup chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • to taste salt
  • to taste pepper
  • 1 tablespoon olive oil
  • 2 tablespoons flour

Instructions: 

  • Season the chicken thighs with salt and pepper. Set the Instant Pot to sauté mode and heat the olive oil.
  • Brown the chicken thighs on both sides, then remove and set aside.
  • Add the chopped bacon to the pot and cook until crispy. Add the onion and garlic, sauté until softened.
  • Stir in the flour and tomato paste, then slowly pour in the red wine and chicken broth, stirring constantly.
  • Add the thyme and return the chicken thighs to the pot. Close the lid and set to high pressure for 15 minutes.
  • Once done, release the pressure manually and serve the Coq au Vin hot.

Notes:

For a richer flavor, you can marinate the chicken in red wine for a few hours before cooking.
