Instructions:
Season the chicken thighs with salt and pepper. Set the Instant Pot to sauté mode and heat the olive oil.
Brown the chicken thighs on both sides, then remove and set aside.
Add the chopped bacon to the pot and cook until crispy. Add the onion and garlic, sauté until softened.
Stir in the flour and tomato paste, then slowly pour in the red wine and chicken broth, stirring constantly.
Add the thyme and return the chicken thighs to the pot. Close the lid and set to high pressure for 15 minutes.
Once done, release the pressure manually and serve the Coq au Vin hot.
Notes:
For a richer flavor, you can marinate the chicken in red wine for a few hours before cooking.
