Ingredients:  

Main Ingredients

  • 4 pork shanks
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • to taste Salt and pepper

Instructions: 

  • Season the pork shanks with salt and pepper.
  • Select the "Saute" function on the Instant Pot and heat the olive oil.
  • Brown the pork shanks on all sides, then remove and set aside.
  • Add the onion and garlic to the Instant Pot, sauté until softened.
  • Pour in the chicken broth and deglaze the pot, scraping up any browned bits.
  • Return the pork shanks to the pot, add thyme, and close the lid.
  • Cook on high pressure for 1 hour.
  • Let the pressure release naturally for 15 minutes, then manually release any remaining pressure.
  • Serve the pork shanks with the cooking liquid as a sauce.
