Ingredients:  

Main Ingredients

  • 1 lb boneless, skinless chicken breasts diced
  • 1 cup wild rice
  • 1 onion chopped
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • Fresh parsley for garnish

Instructions: 

  • Place chicken, wild rice, onion, carrots, celery, chicken broth, thyme, salt, and pepper in the Instant Pot.
  • Close the lid, set the valve to sealing, and cook on high pressure for 25 minutes.
  • Allow natural pressure release for 10 minutes, then do a quick release.
  • Stir in the heavy cream and adjust seasoning if needed.
  • Serve hot, garnished with fresh parsley.

Notes:

This soup can be stored in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.
