beef broth

dried thyme

Salt and pepper
Instructions:
Season the sirloin tip roast with salt and pepper.
Select the sauté function on the Instant Pot and heat olive oil.
Sear the roast on all sides until browned, then remove and set aside.
Add onions and garlic to the pot, sauté until softened.
Pour in beef broth and deglaze the pot, scraping up any browned bits.
Add thyme and rosemary, then return the roast to the pot.
Close the lid, set to high pressure for 50 minutes.
Natural release for 10 minutes, then quick release any remaining pressure.
Remove the roast, slice, and serve with the gravy.
Notes:
For best results, let the roast rest for a few minutes before slicing to retain its juices.
