Ingredients:  

Main Ingredients

  • 2 pounds beef stew meat cut into chunks
  • 1 onion chopped
  • 3 carrots sliced
  • 3 potatoes diced
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 2 cloves garlic minced
  • 1 teaspoon thyme
  • to taste Salt and pepper
  • 2 tablespoons olive oil

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the beef and brown on all sides.
  • Add the onions and garlic, sauté for 2 minutes.
  • Add the beef broth, diced tomatoes, thyme, salt, and pepper.
  • Close the lid, set to high pressure for 25 minutes.
  • Once done, do a quick pressure release.
  • Add the carrots and potatoes, close the lid, and cook on high pressure for an additional 10 minutes.
  • Quick release the pressure and serve hot.

Notes:

For a thicker stew, you can add a slurry of cornstarch and water at the end and sauté for a few minutes.
