Green onions, chopped (for garnish)
Instructions:
Set the Instant Pot to sauté mode and brown the ground beef.
Add the onion, bell pepper, and garlic. Cook until vegetables are soft.
Stir in the rice, diced tomatoes, chicken broth, paprika, thyme, oregano, salt, and pepper.
Close the Instant Pot lid and set to high pressure for 10 minutes.
Once done, allow for a natural pressure release for 5 minutes, then do a quick release.
Fluff the rice with a fork and serve garnished with chopped green onions.
Notes:
This recipe can be easily doubled to serve more people. Adjust the cooking time accordingly.
