Ingredients:  

Main Ingredients

  • 1 cup long-grain white rice
  • 1 lb ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes 14.5 oz
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • to taste Salt and pepper
  • to taste Green onions, chopped (for garnish)

Instructions: 

  • Set the Instant Pot to sauté mode and brown the ground beef.
  • Add the onion, bell pepper, and garlic. Cook until vegetables are soft.
  • Stir in the rice, diced tomatoes, chicken broth, paprika, thyme, oregano, salt, and pepper.
  • Close the Instant Pot lid and set to high pressure for 10 minutes.
  • Once done, allow for a natural pressure release for 5 minutes, then do a quick release.
  • Fluff the rice with a fork and serve garnished with chopped green onions.

Notes:

This recipe can be easily doubled to serve more people. Adjust the cooking time accordingly.
