Ingredients:  

Main Ingredients

  • 1.5 lbs chicken thighs
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • 0.5 tsp ground ginger
  • 0.25 tsp cayenne pepper
  • 1 can diced tomatoes
  • 0.5 cup chicken broth
  • 0.25 cup chopped dried apricots
  • to taste Salt and pepper
  • for garnish Fresh cilantro

Instructions: 

  • Season chicken thighs with salt and pepper.
  • Turn on the Instant Pot to sauté mode and brown the chicken on both sides. Remove and set aside.
  • Add onions and garlic to the pot and sauté until softened.
  • Stir in cumin, coriander, cinnamon, paprika, ginger, and cayenne pepper.
  • Add diced tomatoes, chicken broth, and dried apricots. Mix well.
  • Return the chicken to the pot and secure the lid. Cook on high pressure for 10 minutes.
  • Quick release the pressure and open the lid. Shred the chicken using two forks.
  • Serve the Moroccan chicken over couscous or rice, garnished with fresh cilantro.

Notes:

This dish pairs well with couscous or rice. Adjust the spices according to your taste preference.
