Instructions:
Season chicken thighs with salt and pepper.
Turn on the Instant Pot to sauté mode and brown the chicken on both sides. Remove and set aside.
Add onions and garlic to the pot and sauté until softened.
Stir in cumin, coriander, cinnamon, paprika, ginger, and cayenne pepper.
Add diced tomatoes, chicken broth, and dried apricots. Mix well.
Return the chicken to the pot and secure the lid. Cook on high pressure for 10 minutes.
Quick release the pressure and open the lid. Shred the chicken using two forks.
Serve the Moroccan chicken over couscous or rice, garnished with fresh cilantro.
