Ingredients:  

Main Ingredients

  • 4 cups corn kernels
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 potatoes, diced
  • 4 cups vegetable broth
  • 1 cup milk
  • 0.5 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions: 

  • Set the Instant Pot to sauté mode and sauté the onion and garlic until softened.
  • Add the corn, potatoes, vegetable broth, milk, and season with salt and pepper.
  • Close the lid, set the Instant Pot to high pressure for 5 minutes.
  • Once done, do a quick release and stir in the heavy cream.
  • Serve hot, garnished with chopped parsley.

Notes:

This chowder is perfect for a quick weeknight meal. You can also add other vegetables like carrots or celery for extra flavor and nutrition.
