Ingredients:  

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt

Wet Ingredients

  • 3 ripe bananas, mashed
  • 0.5 cup sugar
  • 0.5 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions: 

  • In a bowl, mix together flour, baking powder, baking soda, and salt.
  • In another bowl, mix mashed bananas, sugar, vegetable oil, eggs, and vanilla extract.
  • Combine wet and dry ingredients until just mixed.
  • Pour the batter into a greased pan that fits in the Instant Pot.
  • Add 1 cup of water to the Instant Pot, place the trivet inside, and lower the pan onto the trivet.
  • Close the lid, set to sealing, and cook on high pressure for 50 minutes.
  • Allow natural pressure release for 10 minutes before quick releasing any remaining pressure.
  • Carefully remove the pan from the Instant Pot and let the banana bread cool before slicing and serving.

Notes:

For best results, use very ripe bananas. You can also add nuts or chocolate chips to the batter for extra flavor.
