Ingredients:  

Main Ingredients

  • 1 tablespoon oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 andouille sausage, sliced
  • 1 breast chicken, diced
  • 1 cup long grain rice
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon thyme
  • to taste Salt and pepper
  • to garnish Green onions, chopped

Instructions: 

  • Set the Instant Pot to sauté mode and heat the oil. Add the onion, bell pepper, celery, and garlic. Cook until softened.
  • Add the sausage and chicken, cook until browned.
  • Stir in the rice, diced tomatoes, chicken broth, Cajun seasoning, thyme, salt, and pepper.
  • Close the Instant Pot lid and set to high pressure for 5 minutes.
  • Once done, allow for a natural pressure release for 10 minutes, then do a quick release.
  • Fluff the jambalaya with a fork and serve garnished with green onions.

Notes:

For a spicier version, add more Cajun seasoning or a dash of hot sauce.
