garlic, minced

beef broth

dried thyme

dried rosemary
Salt and pepper to taste
Instructions:
Season the eye of round roast with salt and pepper.
Select the "Saute" function on the Instant Pot and heat the olive oil.
Sear the roast on all sides until browned, then remove and set aside.
Add the chopped onion and garlic to the Instant Pot and sauté until softened.
Pour in the beef broth and deglaze the pot, scraping up any browned bits from the bottom.
Add the thyme and rosemary to the pot.
Return the roast to the Instant Pot.
Close the lid, set the valve to sealing, and cook on high pressure for 60 minutes.
Allow for a natural pressure release for 15 minutes before quick releasing any remaining pressure.
Remove the roast from the Instant Pot and let it rest before slicing.
Serve the sliced roast with the cooking juices as a gravy.
Notes:
For best results, let the roast rest for at least 10 minutes before slicing to retain its juices.
