Instructions:
Caramelize the sugar in a saucepan until golden brown, then pour into the bottom of the flan mold.
In a blender, combine eggs, sweetened condensed milk, evaporated milk, vanilla extract, and salt. Blend until smooth.
Pour the mixture over the caramel in the flan mold.
Cover the mold with aluminum foil.
Add 1 cup of water to the Instant Pot, place the trivet inside, and put the flan mold on top.
Close the Instant Pot, set to high pressure for 25 minutes, then do a quick release.
Carefully remove the flan mold, let it cool, then refrigerate for at least 4 hours.
To serve, run a knife around the edges of the flan, place a plate on top, and flip to release the flan with the caramel on top.
Notes:
For best results, ensure the caramel is evenly spread at the bottom of the mold before adding the flan mixture.
