Ingredients:  

Main Ingredients

  • 1 cup long-grain white rice
  • 1 tablespoon oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes undrained, 14 oz
  • 1 cup chicken or vegetable broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro chopped, for garnish

Instructions: 

  • Turn on the Instant Pot to sauté mode and heat the oil.
  • Add the onion and garlic, sauté until softened.
  • Add the rice and toast for a few minutes.
  • Stir in the diced tomatoes, broth, chili powder, cumin, salt, and pepper.
  • Close the Instant Pot lid, set to manual high pressure for 5 minutes.
  • Once done, allow natural pressure release for 5 minutes, then quick release.
  • Fluff the rice with a fork, garnish with fresh cilantro, and serve.

Notes:

For a spicier version, add a chopped jalapeño or a dash of hot sauce.
