Ingredients:  

Main Ingredients

  • 1 cup long-grain white rice
  • 1.5 cups chicken or vegetable broth
  • 1 can diced tomatoes, undrained 14.5 oz
  • 1 small onion, diced
  • 1 bell pepper, diced bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • to taste Fresh cilantro, chopped for garnish

Instructions: 

  • Place all ingredients except for cilantro in the Instant Pot.
  • Close the lid, set the valve to sealing, and cook on high pressure for 5 minutes.
  • Once done, allow for a natural pressure release for 5 minutes, then do a quick release.
  • Fluff the rice with a fork and let it sit for a few minutes.
  • Serve garnished with fresh cilantro.

Notes:

Feel free to adjust the spices to your taste. You can also add other vegetables like corn or peas for extra flavor and nutrition.
