Instructions:
Set the Instant Pot to sauté mode and heat the olive oil.
Add the onion, garlic, carrots, celery, and red bell pepper. Cook until softened.
Stir in the thyme and paprika.
Pour in the chicken broth and add the chicken and corn.
Close the Instant Pot lid and set to high pressure for 5 minutes.
Quick release the pressure and stir in the heavy cream. Season with salt and pepper.
Serve hot, garnished with chopped parsley.
Notes:
For a thicker chowder, you can blend a portion of the soup before adding the cream.
