Ingredients:  

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 red bell pepper, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 4 cups chicken broth
  • 2 cups diced cooked chicken
  • 2 cups frozen corn
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the onion, garlic, carrots, celery, and red bell pepper. Cook until softened.
  • Stir in the thyme and paprika.
  • Pour in the chicken broth and add the chicken and corn.
  • Close the Instant Pot lid and set to high pressure for 5 minutes.
  • Quick release the pressure and stir in the heavy cream. Season with salt and pepper.
  • Serve hot, garnished with chopped parsley.

Notes:

For a thicker chowder, you can blend a portion of the soup before adding the cream.
