  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup long-grain white rice
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 lb chicken thighs, cut into bite-sized pieces
  • 0.5 cup frozen peas
  • Fresh cilantro, for garnish

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the onion, garlic, and bell peppers. Cook until softened.
  • Stir in the rice, diced tomatoes, chicken broth, cumin, paprika, salt, and pepper.
  • Add the chicken pieces on top.
  • Close the Instant Pot lid and set to high pressure for 8 minutes.
  • Once done, do a quick pressure release and stir in the frozen peas.
  • Let it sit for a few minutes to allow the peas to heat through.
  • Serve hot, garnished with fresh cilantro.

Notes:

You can substitute chicken breasts for chicken thighs if preferred.
