Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 small onion chopped
  • 1 green bell pepper chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 1/4 cup sliced green olives
  • 2 tbsp capers
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 1/4 cup raisins
  • 1/4 cup chopped fresh cilantro

Instructions: 

  • Set the Instant Pot to sauté mode and brown the ground beef.
  • Add the onion, bell pepper, and garlic. Cook until vegetables are softened.
  • Stir in the diced tomatoes, olives, capers, cumin, oregano, salt, and pepper.
  • Close the Instant Pot lid and set to high pressure for 10 minutes.
  • Once done, quick release the pressure and stir in the raisins and cilantro.
  • Serve hot over rice or with tortillas.
